Tea Class 1-1 (2+ hours)
- Tea in its most natural form — its origins and how people first discovered it.
- The effort to preserve the fresh tea leaf — how tea-making evolved into more refined methods.
- Green Tea, White Tea
- The natural compounds in tea leaves — how heat, air, and time transform them.
Tea Class 1-2 (2+ hours)
- The further evolution of tea processing — towards richer aromas and a smoother taste.
- Yellow, Blue (Oolong), Red (Black), and Dark teas.
- Taste and compare teas — understand the six tea categories through a little background knowledge and direct comparison.

With so many different teas available today, it can be difficult to know where to begin.
- Why does one Blue(oolong) tea taste fresh and floral, while another is rich and roasted?
- What distinguishes green tea from yellow tea, when they appear so similar in aroma and appearance?
Tea Class 1 explores these questions through guided tasting, using the six tea categories: Green, White, Yellow, Blue (Oolong), Red (Black), and Dark Tea.
By the end of the course, the vast world of tea will feel more familiar and easier to explore.
